April is National Grilled Cheese Month!
There’s a food holiday for just about every calendar day of the year, but grilled cheese holds a special place in all of our hearts. From the kind your mom used to make to some fancier versions; there’s something absolutely comforting about a good grilled cheese.
We decided it spice things up a little and compile a list of some of the best grilled cheese sandwich recipes. There’s one to suit any mood you’re in and there are some that are just downright adventurous. So go ahead, celebrate grilled cheese month – really – why not?

Raspberry Brie Panini
Fruit and cheese is almost always a delicious combination, but this sandwich really takes the cheesecake. It’s tart, fresh and creamy. Brie makes an amazing addition to grilled cheese under normal circumstances, but add the berries? You’re going to love it! (source)

Blueberry Grilled Cheese
Balsamic vinegar is used here in a really smart way. It’s the magic that makes the blueberries and the cheese go together so well. (source)
Ingredients
- 2 slices of bread (I used sourdough)
- Plenty of white cheese
- Fresh spinach or arugala
- 1/2 cups fresh or frozen blueberries
- 1 tbs balsamic vinegar
- 1 1/2 tbs. brown sugar

Balsamic Brussel Sprout Grilled Cheese
Even if you aren’t a brussel sprout fan, this grilled cheese is a total standout if you ask us! (source)

- 1/2 pound brussels sprouts, stems removed and chopped or shredded
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- balsamic glaze or reduction
- 12 ounces of havarti cheese, sliced
- 8 slices whole grain bread
- softened butter for spreading

Cherry Chocolate & Brie Grilled Cheese
It’s like a cheesecake in a sandwich. There’s absolutely nothing more to say. (source)

- 1/2 cup cherries, pitted and halved
- 1 teaspoon balsamic vinegar (or brandy or port)
- 1 tablespoon butter
- 2 slices bread
- 1 1/2 ounces brie, room temperature
- 1 ounce dark chocolate, chopped, room temperature

Roasted Vegetable Grilled Cheese
This is a healthy, grownup take on the beloved grilled cheese, but it’s delicious! It has an italian feel to it that’s meaty and super satisfying (source)

1 lb broccoli, or 8 oz broccoli florets
1 red bell pepper
1 small yellow onion
2 tbsp. olive oil
2 tbsp. balsamic vinegar
¼ tsp. salt
Pinch red pepper flakes (optional)
Freshly ground black pepper, to taste
8 slices quality whole grain bread, preferably sourdough
8 oz shredded cheddar cheese
1-2 tsp. Dijon mustard
1+ tbsp. butter

Caramelized Onion Grilled Cheese
Cheese…onions…it’s a natural marriage. A little sweet, a lot creamy and cheesy; this is going to become one of your fast favorites! (source)

1 large onion, thinly sliced
1 teaspoon salt
1/8 teaspoon black pepper
2 Tablespoons sugar
1/4 cup balsamic vinegar
1 Tablespoon unsalted butter
4 slices bread (such as sourdough or brioche)
4 slices sharp cheddar cheese
1 cup kale leaves

Green Goddess Grilled Cheese
For those of you trying to get your greens? It’s the ultimate healthy and delicious grilled cheese, period.(source)

- 2 slices bread
- 2-3 tablespoons Herb Pesto
- 2 slices mild white melty cheese like mozzarella
- handful fresh baby spinach
- ¼ avocado, sliced
- 2 tablespoons goat cheese, crumbled
- olive oil (and butter if you’re so inclined)

Roasted Pepper Grilled Cheese
What can we say? It’s zippy and tangy, and is reminiscent of a stuffed pepper, somehow. (source)

Caprese Grilled Cheese
Who doesn’t love a fresh caprese salad? This melty version puts a totally different spin on the textures, but it’s all of the tastes you expect from caprese! (source)

Beet & Goat Cheese Grilled Cheese
Beets are delicious, healthy and absolutely beautiful. This sandwich is as stunning as they come. The earthiness and the gaminess of the ingredients make it an interesting sandwich (probably not for the kids!) but definitely a great contender in our list. (source)
