Head Chef
Responsibilities

Crafting artisanal ice cream using real ingredient, small batch and hand crafted. Ordering products, ensuring inventory available in an efficient and cost-effective manner. Continuously crafting new flavours and proactively preparing for special events and holidays showcasing Havens unique and exquisite flavour offerings. Leading the team through production and daily processes of base production, freezing and packaging of ice cream. Ice cream sandwiches, ice cream cakes and toffee. Training staff/workers in job duties, safety procedures and company policies. Ensuring cleanliness and sanitation of ice cream production area. Prepare production/prep lists and other reports, recommend measures to improve productivity and product quality. Supervise and regular review activities of workers. Establish methods to meet work deadlines efficiently without sacrificing quality. Identify, evaluate, control, and prevent hazards at all stages of the food production process. Order ingredients, materials, equipment, and supplies (funding best prices to meet food cost goals). Manage inventory and tracking using for cost control. A quarterly updated (or as requested by owners/accounting) food costing speed- sheet in Excel.

Managing up to 4-5 staff members in the kitchen and reporting directly to owner. Working in a dynamic environment where creativity and expression is encouraged. Ability to manage time and organize team in fast paced environment and ability to work independently as well as with a team. Strong problem solving skills and commitment to quality and excellence is key.

Qualifications

Work experience - post secondary school in culinary school required, pastry experience preferred. 3 years of previous kitchen experience in a senior food industry role - ie. Head Chef, Sous Chef, kitchen supervisor/shift lead and crafting ice cream is optimal. Red seal chef is preferred.

Education - College, CEGEP or other non-university certificate or diploma from a program of 1-2 years, culinary school and certified food safety training.

Experience:

  • kitchen: 3 years (required)
  • ice cream: 1 year (required)

Licence/Certification: culinary education/training - red seal preferred (required)
